Every Friday were going to post a recipe or a dish that we have made recently, or caught our attention to try it.  We want to encourage you to think outside your cooking box with these recipes and try different things.  It could be adding spices you have never tried, a different cooking technique like braising, or trying an entirely new vegetable. Try these out and let us know how you like it, you may have a standby recipe that you use frequently.

Not Yo Momma’s Meatloaf Recipe {It’s better}

  • COOK TIME: 45 min
  • TOTAL TIME: 1 h
  • YIELD: 6
  • DIFFICULTY: easy

Ingredients:

  • 2 pounds Grass-Fed Ground Beef
  • 1/2 cup Green Pepper
  • 1/2 cup Celery
  • 1/2 cup Onion
  • 1/2 cup Almond Meal/Almond Flour
  • 1/2 cup Organic Tomato Sauce
  • 2 Eggs
  • 2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 3 tablespoons Coconut Aminos
  • 1/2 teaspoon Tabasco Sauce
  • 1/2 Lemon Juiced
  • For the sauce:
  • 1/2 cup Organic Honey
  • 1/2 cup Organic Tomato Sauce
  • 1 tablespoon Dry Mustard
  • 2 tablespoon Coconut Aminos
 

Directions:

  1. First, chop your onion, celery and green pepper into small, bit-size pieces. Once they are chopped, begin sautéing them in some coconut oil (or olive oil) in a small pan until they are soft and cooked through.

  3. Next, in a large bowl, combine the ground beef, almond flour, eggs, salt, pepper, coconut aminos, tomato sauce, tabasco sauce and lemon juice.

  5. Once the peppers, celery and onions are cooked, add them into the mixture.

  7. The next step is the messy part, so take off your rings if you wear them. Begin to mash everything together with your hands until the mixture is combined. Then, split into two halves (these will be your loaves so try to make them even).

  8. Next, remove the loaves from the bowl and place them in a 9×11 baking dish. You can use any size that will accommodate the loaves, but this size gives them enough room to bake without touching.

  10. Bake at 350 for 45 minutes.

  11. While the meatloaf is baking, begin making your sauce for the topping. Combine the tomato sauce, coconut aminos, honey and dry mustard in a saucepan. Bring to a boil and then allow to simmer on low until the meat loaf is done.

  13. After baking for 45 minutes, remove the meatloaf from oven and drain the fat from the baking dish. I tilted the dish and scooped out the fat onto a paper towel lined plate.

  15. Next, pour the sauce on top of the meatloaf in the baking dish- distribute evenly. Place the meatloaf back into the oven for approximately 20 minutes or until the meatloaf is cooked through.

  16. When the meatloaf is done, take it out of the oven and let it rest a bit before serving. Serve with a side of cauliflower, cauliflower mashed potatoes or other yummy veggies. Enjoy!
